Tim Tam Chocolate Malt Frosted Brownies

Tim Tam Stuffed Chocolate Malt Frosted Brownies

Ingredients

    Tim Tam Stuffed Brownies
  • 1/2 c butter
  • 1/2 c cocoa powder
  • 1 c packed light brown sugar
  • 1 tsp instant espresso powder
  • 2 eggs - room temp
  • 1 tsp vanilla
  • 1/2 c all purpose flour
  • 1/4 tsp salt
  • 15 Tim Tam Cookies (about 1 1/2 packages)
  • Chocolate Malt Buttercream
  • 1/2 c butter
  • 1/2 c Chocolate Malt Powder (I used Carnation but Milo or Ovaltine would work)
  • 2 1/2 c confectioners sugar
  • 2 tbs milk
  • Chocolate Glaze
  • 3 oz dark chocolate chopped
  • 2 tbs butter
  • 1 tsp light corn syrup

Instructions

    Brownies
  1. Preheat oven to 375 F. Move oven rack to the middle position. Line a 8x8 pan with parchment paper and set aside.
  2. In a medium saucepan melt butter, add in cocoa, espresso powder and brown sugar. Stir until smooth.
  3. Let cool a couple minutes. Then add in your eggs and vanilla. Stir until just combined.
  4. Add flour and salt and stir with a spatula until no flour streaks remain.
  5. Place a thin layer of batter on the bottom of your prepared pan. Then layer your cookies on top.
  6. Pour the remaining batter over top of the cookies. Smooth out making sure the batter gets in between the cookies.
  7. Bake for 15-17 minutes until a toothpick comes out slightly wet. You don't want to over bake.
  8. Place on a wire rack in the pan to cool.
  9. Chocolate Malt Buttercream.
  10. In the bowl of a standing mixer beat butter for 3-5 minutes on medium speed, until fluffy.
  11. Add in your chocolate malt powder and mix until uniform in color.
  12. Sift in your confectioners sugar and then pour in your milk.
  13. Mix on low until the confectioners sugar is incorporated and then increase speed and mix until light and fluffy.
  14. Chocolate Glaze.
  15. In a small microwavable bowl add in your chocolate, butter and corn syrup. Microwave on 50% power stirring every 30 second until smooth.
  16. Assembly.
  17. Carefully remove the brownies from the pan and then scoop all the frosting on top. Smooth out frosting and then pour the glaze over top. If your glaze is still warm pop your frosted brownies in the freezer for a couple minutes so the glaze doesn't melt the frosting.
  18. The easiest way to make the design is to put the glaze in a squeeze bottle and pour over top.
  19. Cut into 2 inch squares and enjoy.
  20. Also freezes well.

It’s Secret Recipe Club time again!!!  This month I was assigned Lick The Spoon written by Louise.  She comes up with stuff like Boston Banoffee Pie, Bailey’s Tiramisu and Mango Chilli and Lime Aioli with Prawns.  Oh and she looks like a super model.  When I saw the Tim Tam Brownies I was sold!

Halloween is coming up fast.  It seriously feels like October just flew by.  I can’t wait for trick-or-treating and seeing all the decorations.  I love seeing all the kids in their costumes.  The costumes have totally changed since I was a kid.  Now they are almost all store bought.  Back in my day our costumes were more imagination made.

Biscoff Pumpkin Cheesecake

I am nursing a pretty bad hangover today.  A food hangover that is.  It was Thanksgiving this past weekend and I am still unsure how I possibly ate as much food as I did and survive.  I sort of feel like the gluttony from the move Se7en.  If you haven’t seen it, what is wrong with you?  I need to spend the next month on some sort of green fruit only weird smelly cleanse or something of the sort.

All the new shows are finally starting up on TV.  We are already too involved in Survivor.  I mean Blair is on it.  For those of you who don’t know who Blair is from Facts of Life is, you just made me feel VERY old.  There is cat fighting and bitchy comments all over the place.  Good ol’ reality tv.  I mean what did we watch before Survivor and Big Brother and Honey Boo Boo?

Back to School Bake Off

So a couple of weeks ago I was lucky enough to receive a package of Betty Crocker and Cake Mate products from Sprinkles and Grins.  It was FILLED with tons of cake and cookie decorating stuff.  It was the best mail day EVER.  They have an awesome new website with a ton of back to school snack ideas using their awesome decorating supplies.  If you follow me on Instagram you might remember this pic.

I moved

Hey Everyone,

 

I finally moved over to WordPress.  Yay me.  I have been thinking about it forever and finally jumped in and did it.  I am happy with the new look but still working out some of the kinks.  (like how to have all you RSS and email subscribers still get updated.) Please bear with me.
