Yay for Secret Recipe Club time!!  This summer just seems to have flown by.  I can’t believe only a couple of weeks left and Little Miss will be starting kindergarten and Little Mister will be going into daycare for the first time.  I will also be going back to work full time for the first time in over 5 years.  It’s like all the change is coming at the same time.  It’s crazy!

Wow the past month just flew by, it’s already time for the Secret Recipe Club.  I can’t believe how fast the days have been passing.  The past month has been filled with running and hiking, dog walking and book reading. One epic cake fail at Little’s Miss’s birthday party and memory making.  I was super excited when I got Cook with Sara.

It’s Secret Recipe Club time again. Are you as excited as I am? This month I got to drool over the fabulous recipes at Kate’s Kitchen. Caramelized Banana Crisp

Caramelized Banana Crisp Recipe

I have been a total blog failure lately.  I’ve basically ignored the computer for weeks.  Sometimes life just gets in the way.  First, it was Little Misters birthday party, then birthday, then summer decided to show up for a week.  There were picnics and water parks and reading outside in the sun.  Flip flops, suntan lotion and bbqs.  It was amazing.

Tim Tam Stuffed Chocolate Malt Frosted Brownies

Tim Tam Chocolate Malt Frosted Brownies

Tim Tam Stuffed Chocolate Malt Frosted Brownies

Ingredients

    Tim Tam Stuffed Brownies
  • 1/2 c butter
  • 1/2 c cocoa powder
  • 1 c packed light brown sugar
  • 1 tsp instant espresso powder
  • 2 eggs - room temp
  • 1 tsp vanilla
  • 1/2 c all purpose flour
  • 1/4 tsp salt
  • 15 Tim Tam Cookies (about 1 1/2 packages)
  • Chocolate Malt Buttercream
  • 1/2 c butter
  • 1/2 c Chocolate Malt Powder (I used Carnation but Milo or Ovaltine would work)
  • 2 1/2 c confectioners sugar
  • 2 tbs milk
  • Chocolate Glaze
  • 3 oz dark chocolate chopped
  • 2 tbs butter
  • 1 tsp light corn syrup

Instructions

    Brownies
  1. Preheat oven to 375 F. Move oven rack to the middle position. Line a 8x8 pan with parchment paper and set aside.
  2. In a medium saucepan melt butter, add in cocoa, espresso powder and brown sugar. Stir until smooth.
  3. Let cool a couple minutes. Then add in your eggs and vanilla. Stir until just combined.
  4. Add flour and salt and stir with a spatula until no flour streaks remain.
  5. Place a thin layer of batter on the bottom of your prepared pan. Then layer your cookies on top.
  6. Pour the remaining batter over top of the cookies. Smooth out making sure the batter gets in between the cookies.
  7. Bake for 15-17 minutes until a toothpick comes out slightly wet. You don't want to over bake.
  8. Place on a wire rack in the pan to cool.
  9. Chocolate Malt Buttercream.
  10. In the bowl of a standing mixer beat butter for 3-5 minutes on medium speed, until fluffy.
  11. Add in your chocolate malt powder and mix until uniform in color.
  12. Sift in your confectioners sugar and then pour in your milk.
  13. Mix on low until the confectioners sugar is incorporated and then increase speed and mix until light and fluffy.
  14. Chocolate Glaze.
  15. In a small microwavable bowl add in your chocolate, butter and corn syrup. Microwave on 50% power stirring every 30 second until smooth.
  16. Assembly.
  17. Carefully remove the brownies from the pan and then scoop all the frosting on top. Smooth out frosting and then pour the glaze over top. If your glaze is still warm pop your frosted brownies in the freezer for a couple minutes so the glaze doesn't melt the frosting.
  18. The easiest way to make the design is to put the glaze in a squeeze bottle and pour over top.
  19. Cut into 2 inch squares and enjoy.
  20. Also freezes well.

Lemon Sunshine Cookies

Lemon Sunshine Cookies-19

I am running a 10k race this Sunday, it’s called the Vancouver Sun Run. There are around 50,000 participating. It’s always been in the back of my head since I was a teenager that I wanted to do it. I never thought I would. Things changed for me just about a year ago when a group (Red Faced Runners) on Twitter decided to challenge everyone to complete a 5k. This will be my 3rd race in less than a year.
