Tim Tam Chocolate Malt Frosted Brownies

Tim Tam Stuffed Chocolate Malt Frosted Brownies

Ingredients

    Tim Tam Stuffed Brownies
  • 1/2 c butter
  • 1/2 c cocoa powder
  • 1 c packed light brown sugar
  • 1 tsp instant espresso powder
  • 2 eggs - room temp
  • 1 tsp vanilla
  • 1/2 c all purpose flour
  • 1/4 tsp salt
  • 15 Tim Tam Cookies (about 1 1/2 packages)
  • Chocolate Malt Buttercream
  • 1/2 c butter
  • 1/2 c Chocolate Malt Powder (I used Carnation but Milo or Ovaltine would work)
  • 2 1/2 c confectioners sugar
  • 2 tbs milk
  • Chocolate Glaze
  • 3 oz dark chocolate chopped
  • 2 tbs butter
  • 1 tsp light corn syrup

Instructions

    Brownies
  1. Preheat oven to 375 F. Move oven rack to the middle position. Line a 8x8 pan with parchment paper and set aside.
  2. In a medium saucepan melt butter, add in cocoa, espresso powder and brown sugar. Stir until smooth.
  3. Let cool a couple minutes. Then add in your eggs and vanilla. Stir until just combined.
  4. Add flour and salt and stir with a spatula until no flour streaks remain.
  5. Place a thin layer of batter on the bottom of your prepared pan. Then layer your cookies on top.
  6. Pour the remaining batter over top of the cookies. Smooth out making sure the batter gets in between the cookies.
  7. Bake for 15-17 minutes until a toothpick comes out slightly wet. You don't want to over bake.
  8. Place on a wire rack in the pan to cool.
  9. Chocolate Malt Buttercream.
  10. In the bowl of a standing mixer beat butter for 3-5 minutes on medium speed, until fluffy.
  11. Add in your chocolate malt powder and mix until uniform in color.
  12. Sift in your confectioners sugar and then pour in your milk.
  13. Mix on low until the confectioners sugar is incorporated and then increase speed and mix until light and fluffy.
  14. Chocolate Glaze.
  15. In a small microwavable bowl add in your chocolate, butter and corn syrup. Microwave on 50% power stirring every 30 second until smooth.
  16. Assembly.
  17. Carefully remove the brownies from the pan and then scoop all the frosting on top. Smooth out frosting and then pour the glaze over top. If your glaze is still warm pop your frosted brownies in the freezer for a couple minutes so the glaze doesn't melt the frosting.
  18. The easiest way to make the design is to put the glaze in a squeeze bottle and pour over top.
  19. Cut into 2 inch squares and enjoy.
  20. Also freezes well.

It’s Secret Recipe Club time again!!!  This month I was assigned Lick The Spoon written by Louise.  She comes up with stuff like Boston Banoffee Pie, Bailey’s Tiramisu and Mango Chilli and Lime Aioli with Prawns.  Oh and she looks like a super model.  When I saw the Tim Tam Brownies I was sold!

When I was in my early 20′s I worked in the deli of a fine foods store and that was where I had my first Tim Tam.  If you have never had one you are missing out.  They are a chocolate dipped sandwich cookie from Australia.

And because I couldn’t leave them alone I decided on frosting.
And then dark chocolate glaze.

I loved that the brownie was thin and so it was more a cookies hugged with brownie then cookie swimming in brownie.

There are really no words for how amazing these are.

Oh and incase you were wondering I finished the Sun Run under my goal of 1:05 with 1:01:54.  Next goal in a 10k in under an hour.

In a medium size pot melt your butter, then remove from heat and stir in cocoa, espresso and brown sugar.

Add in eggs and vanilla.

Then flour and salt.

Pour a thin layer into the bottom of  a lined 8×8 pan.

Then top with Tim Tam’s.

Cover with the rest of the brownie batter and smooth out so all the cookies are covered.

Bake for 15-17 minutes.

Chocolate Malt Frosting

Cream your butter until light, then add in your Chocolate Malt Powder.

Add in your confectioners sugar and milk.

Lemon Sunshine Cookies

Beat until light and fluffy.

Dark Chocolate Glaze

In a small bowl melt chocolate, butter and corn syrup together on 50% power until smooth.

Assembly

Remove cooled brownies from the pan, carefully.

Place all the frosting on top and the smooth out evenly.

Then drizzle with chocolate glaze.

Cut into squares and enjoy!!

    I saw the name of these bars and immediately headed over to Amazon to see how much the Tim Tams would set me back. $8 for shipping is a small price to pay to be able to make something so decadent. Awesome recipe! Makes me almost wish I was Australian. :)

    Oh. My. Word. I spent a semester abroad in Sydney, Australia, where I was introduced to Tim Tams for the first time, and we’ve had a love affair ever since. I’ve never thought to put them into brownies but what a genius idea! I need to make these ASAP – they look incredible!!

    Holy freaking amazingness – I can’t tell you how incredible these brownies look, Christina!!! I’m obsessed with Tim Tams which I why I refrain from buying them – if I have them in my apartment, they don’t last long. Your frosting looks so creamy and thick, and that chocolate glaze on top is gorgeous. Love the styling as usual. And congratulations on that fantastic time for the Sun Run. You’ll hit your goal of 10 K in under a hour for sure at this rate.

    i made these this weekend and can i just say they were the most epic thing I’ve ever baked.
    admittedly i did use double stuffed because they were the only ones i had around and replaced the malt powder with drinking chocolate powder but regardless they were insane! took them to a party and everyone was raving!
    would even just use the brownie recipe on it’s own as it was that good!!
