It’s Secret Recipe Club Time again. I really found myself looking forward to finding out who I had this month. I love the fact you get to totally stalk a new blog and really read the recipes and get a feel for the person writing and cooking. As luck would have it I got an amazing blog this month, Authentic Suburban Gourmet.

I immediately started scouring all the recipes and drooling over all the pictures. There are a ton of recipes for fabulous little appitizers in Lisa’s Friday Night Bites section like Sriracha Popcorn or the Smokey, Spicy and Sweet Bourbon Peanuts which I can’t get outta my head.

I had to put the savoury aside now now and concentrate on the sweet. It took me forever to decide. I kept going back and forth between a couple recipes and then I would look again and find more I wanted to make. The Salted Caramel Corn Cookies finally won. I totally cheated though. It’s horrible, I know. I didn’t make the caramel corn from scratch.

Here is the reason I didn’t. Leftovers. I am trying NOT to consume my body weight in sugar and butter and having excess caramel corn around the house along with these cookies was just too much for my willpower to take. I used an entire box of Crunch and Munch instead.

I read the ingredients and assumed it would be a typical recipe, but the method is different. I’ve never made cookies like this before. I have to say the result is fantastic. I loved these cookies. They popcorn out the outside of the cookie gets all hard and caramelized and the popcorn inside becomes soft and sweet all while being held together by this flavorful cookie.

Crunch and Munch Cookies

Cream together butter and brown sugar until light and fluffy.

Egg in your egg and whip on medium high speed for 30 seconds.

Add in your vanilla and baking powder.   While the mixer is on low slowly add in your flour until incorporated.

Then fold in your Crunch and Munch by hand.

Scoop out golf ball sized balls of dough, sprinkle with sea salt and bake for 9-12 minutes until the cookies are golden brown.

Crunch and Munch Cookies

Yield: 12 large cookies


  • 1/2 c butter
  • 1 c packed light brown sugar
  • 1 egg - room temp
  • 1 tsp vanilla
  • 1/2 tsp baking powder
  • 1 1/4 c all purpose flour
  • 3 c Caramel Corn Crunch and Munch (or homemade caramel corn)
  • Sea Salt for Sprinkling


  1. Preheat oven to 350 F. Move oven rack to the middle position. Line a baking sheet with parchment paper and set aside.
  2. In the bowl of a standing mixer add butter and brown sugar. Mix together on medium speed for 3-4 minutes.
  3. Add in your egg and whip on medium high speed until incorporated.
  4. Next, add in your vanilla and baking powder, mix on low until combined.
  5. While the mixer is still on low slowly add your flour and keep mixing until no flour streaks remain.
  6. Stop the mixer and add in your Crunch and Munch. Fold in by hand until the popcorn is evenly coated with the cookie dough.
  7. Take a golf ball sized amount of dough and place on cookie sheet. You should get 6 balls per cookie sheet. I weighed the dough and each was just under 2 oz.
  8. Sprinkle with sea salt.
  9. Bake for 9-12 minutes until dough is lightly browned and the bottoms are golden brown.
  10. Let cool on the pan for one minute and then transfer to cooling rack.
  11. Store in an airtight container for up to 3 days.

    What a fun treat! They do sound divine, and good call on not making your own caramel corn. That stuff is dangerous in my house as well-I try to get it out as soon as possible! But I love cookies even more so combining the two…heaven.

    Happy Monday! So glad that you found so many recipes that you wanted to make. I have to admit that the one you chose is one of my favorites. I think it is a-okay that you did not make the caramel corn but found crunch and munch. I did have a hard time not eating all of the caramel corn. Your version looks fantastic!!
