S’mores Cookie Dough Bites

Lately I’ve been in this crazy food obsession faze. I have been basically eating the same things everyday and loving it. Every morning it’s oatmeal, cinnamon, cardamom, honey and banana with a splash of milk. It’s so warm and tasty. I see the yogurt and fruit and think maybe I should change it up, but I just can’t. I am oatmeal addicted.
For lunch all this week I’ve been have chunky salads sans lettuce, because I personally think lettuce is useless it’s being used in lettuce wraps. Then I drizzle a bit of oil, fresh lemon juice, salt and pepper over top. So good. Oh and did I mention I warm up a pita in the oven and smash together cream cheese and feta for a spread. It is amazing. I can’t get enough.
There are also a couple completely out of character things I’ve been craving, like lemon meringue pie. Ya know those mile high pies with the toasted meringue that you get at a fancy pie place. Ya, I want a giant slice, like all the time. Oh btw, I’m NOT pregnant.
I made these bites for not me, but I am pretty sure I ended up inhaling eating most of them. I love the crunch of the graham cracker and the soft marshmallow, all wrapped up with some chocolate and cookie dough. It’s egg free cookie dough so totally safe to eat. Of course you could take these one step farther and dip in chocolate but…. I couldn’t be bother to wait to eat them.
Now I’m off to make my second batch of chocolate chip cookies in a week. What is wrong with me???
S’mores Cookie Dough Bites
Cream together your butter and sugars.
Add in vanilla and milk. Then flour and salt.
Fold in by hand your marshmallows, mini chocolate chips and crushed graham crackers.
Once combined roll a rounded tablespoon amount of dough into a ball and place on a lined cookie sheet. Let set until firm.
Ingredients
- 1/2 c butter - room temp
- 1/4 c granulated sugar
- 1/2 c packed light brown sugar
- 2 tbs milk
- 1/2 tsp vanilla
- 1 c flour
- 1/3 c mini chocolate chips
- 1/2 c crushed graham crackers (you don't want them dust, small chunks are good)
- 1/2 c mini marshmallows cut in half
Instructions
- Line a baking sheet with parchment paper. Set aside.
- In the bowl of your standing mixer, on medium speed, cream together butter, granulated sugar and brown sugar until light and creamy, about 3-4 minutes.
- Next, add in your milk and vanilla and mix just until combined. While your mixer is on low add in your flour. Once completely incorporated stop your mixer. Pour in your marshmallows, chocolate chips and graham crackers and fold in by hand.
- Once combined scoop a rounded tablespoon of dough and roll into a ball. Place on your lined baking sheet. Place in the fridge for 30 minutes to set.
- You can store either room temp or in the fridge. I prefer them chilled.
