Individual Banana Baked Oatmeal with Cookie Butter

So with the start of the new year, like everyone else, I decided to try and get rid of some of these blogger pounds. Starting a dessert blog is like starting college, you are destined to gain the freshman 15.

So between starting the blog and having little to no will power, my muffin top is more like a full on 10 inch cake. It’s just not pretty. I wasn’t going to give up baking or treats so I am just going to add in a few healthy ones every once and a while.
Oh and I’ve started getting back into running again. I don’t like doing it but I love the way I feel after. When I leave the gym or get back from a class I am energized and ready to take on the world. I just need to keep remembering that on the days when I would rather do anything but get but chubby butt to the gym.
So this baked oatmeal is on the healthy side. I did add a tsp of Cookie Butter to the top and it was amazing. It wasn’t even like eating something healthy. And what was even better is that it’s already portioned. That is a big bonus.
Individual Banana Baked Oatmeal
Ingredients
- 1 medium ripe banana
- 1/3 c milk ( I used 1%)
- 1 egg white
- 1/2 tsp vanilla
- 1/3 c large flake oats
- 1/4 tsp brown sugar
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp all spice
- 1 tsp Cookie Butter - optional
Instructions
- Move oven rack to the middle position and preheat to 350 F.
- In a small bowl mix together oats, sugar, baking powder, salt, cinnamon and all spice. Set aside.
- In a medium bowl mash banana, add egg white and vanilla. Mix until combined. Add in your oat mixture. Once combined pour into an oven safe bowl. (you will need something larger than a ramekin)
- Bake for 30 minutes or until puffy and a toothpick inserted in the middle comes out clean.
- Once you remove from the oven spread on cookie butter and let melt. Dig in.
- Enjoy

I think a breakfast item that tastes like cookies would help me avoid eating a few of the real things

Since I don’t have cookie butter, I guess I’ll have to slather my oatmeal with peanut butter or Nutella. It’s the breakfast of champions!
