Devils Food Cake with Caramel Cream Cheese Frosting

I have totally been MIA over the holidays. It’s been a whole lotta hectic around here. I am sure you know what I’m talking about. All that merriment is awfully tiring. Not only was it Christmas but Mr.’s birthday is on January 1st.

I asked him what kind of cake he wanted this year. His reply “Chocolate and Caramel.”

Ahhh ok. My wheels were began turning and I just had so many ideas it was hard to decide on any one thing. Do I do caramel layers, chocolate layers, fudge frosting, or a whipped ganache center? Milk chocolate, dark chocolate, dripping caramel or sprinkles?

I decided to hit up my new cookbook that my Father-in-law got me for Christmas, Baked Elements.  I was so looking forward to this book and for good reason. There are entire chapters on caramel and chocolate.

Cinnamon Devils Food Cake w/ Caramel Cinnamon Cream Cheese Frosting

I finally settled on devils food cake, from Sprinkle Bakes and a caramel cream cheese frosting from the cookbook. I decided to add some milk chocolate to the caramel frosting for the filling. I could have stopped there but I just wanted to kick it up a little. Add a little more depth. In comes the cinnamon.

This cake is not fooling around. The cake is almost brownie like, dense and rich. The cream cheese frosting is smooth and not overpoweringly sweet. The cinnamon takes this up to the next level and the specks in the frosting are beautiful.

This cake is totally worth breaking your New Year’s resolution for. :)

aka Cinnamon Devil’s Food Cake with Caramel Cinnamon Cream Cheese Frosting

Devil’s Food Cake

Preheat oven to 350 F and butter two 8 inch baking pans. Line the bottoms with parchment paper and butter the parchment.

In a medium bowl whisk together cocoa, hot coffee and chopped chocolate until smooth.

Whisk together eggs, egg yolks, vanilla, sour cream and 1/2 the coffee/chocolate mixture.

In the bowl of your standing add in your flour, brown sugar, baking soda and salt. Mix slowly for 30 seconds.

Then add in your butter

and the rest of the chocolate mixture.

Next, beat in your egg mixture in 2 additions.

Pour into your prepared pans.

Bake for 25-30 minutes until a toothpick comes out with a few slight crumbs on them.

After 10 minutes take your cakes out of the pans and wrap in plastic wrap immediately. Place in the freezer until cooled and you are ready to assemble. (it may sound weird but it’s going to help lock in the moisture)

Cinnamon Cream Cheese Frosting

In a medium sized saucepan add in your brown sugar and 2 oz (1 tbs) of butter. Cook on medium heat until it boils and then cook 15 seconds more. Add in your cream.

In the bowl of your mixer cream together the rest of your butter and cream cheese until smooth.

Add in your confectioners sugar and cinnamon and beat until smooth.

Add in your brown sugar mixture and beat until light and fluffy and ddeeeelicious.

Add in your brown sugar mixture and beat until light and fluffy and ddeeeelicious.

Take 3/4 c of the frosting and then add in 1/2 c of melted room temp milk chocolate and stir until combined.

Assembly

Place one layer of cake on your cake board or cake plate. Top with your chocolate/caramel frosting. Even out with an offset spatula.

Next cover your cake with a thin layer of frosting to lock in the crumbs and place in the fridge for 10 minutes.

Take your cake out and cover with the rest of the frosting.

Store in the fridge but let it sit out for at least 30 minutes before serving. It’s best served room temp.

Resolution Breaker Cake (Cinnamon Devils Food Cake with Cinnamon Caramel Cream Cheese Frosting)

Prep Time: 1 hour

Cook Time: 30 minutes

Total Time: 1 hour, 30 minutes

Yield: One 8 inch 2 layer cake.

Ingredients

    Cinnamon Devils Food Cake
  • 1 oz chopped dark chocolate
  • 3/4 c + 1 tbs cocoa
  • 1 c hot coffee
  • 2 eggs - room temp
  • 2 egg yolks - room temp
  • 1/4 c sour cream - room temp
  • 1 tbs vanilla
  • 2 1/4 c all purpose flour
  • 1 1/2 c packed light brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbs cinnamon
  • 1 c butter - room temp
  • Cinnamon Caramel Cream Cheese Frosting
  • 1/4 c packed dark brown sugar
  • 10 tbs (5oz) butter - room temp
  • 1/3 c whipping (heavy) cream
  • 8 oz (1 package) cream cheese- room temp
  • 2 c confectioners sugar
  • 1 tsp cinnamon
  • 1/2 c chopped milk chocolate

Instructions

    Cinnamon Devils Food Cake
  1. Move oven rack to the middle position. Butter two 8 inch round baking pans with butter. Line the bottoms with parchment paper and then butter your parchment.
  2. In a medium sized bowl add in your cocoa and chopped dark chocolate. Pour in your hot coffee and stir until smooth.
  3. In another bowl whisk together eggs, egg yolks, vanilla and sour cream. Add in 1/2 the chocolate mixture and whisk until combined.
  4. In the bowl of your standing mixer add in your flour, brown sugar, baking soda, salt and cinnamon. Mix on low for 30 seconds. Add in your butter and the remaining chocolate mixture (not with the eggs) and mix on low until everything is just combined, then up the speed to medium and beat for 30 seconds. Scrape down your bowl.
  5. Add in 1/2 your egg and starting on medium-low speed and then increasing to medium speed for 45 seconds. Turn off the mixer add in the rest of your egg mixture and repeat.
  6. Pour batter into your prepared pans, distributing evenly and smooth out with an off set spatula. Bake for 25-30 minutes until puffy and a toothpick inserted comes out with a few loose crumbs.
  7. Let sit in the pans for 10 minutes and then turn out onto plastic wrap and wrap the cake. Place in the freezer until chilled.
  8. Caramel Cinnamon Cream Cheese Frosting
  9. Melt 1/2 c chopped milk chocolate in a medium bowl in the microwave on 50% power stirring every 30 seconds. Set aside.
  10. In a medium saucepan add in your brown sugar and 1/4 tbs (2 oz) of butter. Over medium heat stir together butter and sugar until it starts to boil. Once boiling cook for 15 seconds and then remove from heat. Immediately stir in whipping cream and stir. Pour into another bowl to cool.
  11. Once the brown sugar mixture is cooled, put your butter and cream cheese into the bowl of your standing mixer. On medium speed cream together butter and cream cheese until smooth, making sure to scrape down your bowl at least once.
  12. With your mixer on low stream in your brown sugar mixture and beat until combined. Scrape down your bowl and sift in your confectioners sugar and cinnamon. Mix on low until the sugar is incorporated and then turn up the speed and beat until light and fluffy looking.
  13. Take 3/4 c of the frosting and place in the bowl with the melted milk chocolate and mix until combined.
  14. Assembly
  15. Unwrap the cake layer and place on a cake board or plate. Place the chocolate frosting mixture on the top of the cake and smooth out with an offset spatula.
  16. Place the other layer on top and then cover with a thin layer of the caramel cream cheese frosting. Place in the fridge for 10 minutes to set.
  17. Remove from the fridge and cover with the remaining frosting.
  18. Store in the fridge but allow time for the cake to come to room temp before eating.
  19. *if you find the frosting too thin to nicely spread on the cake put it in the fridge for 15 minutes.

    Oh dear God, this cakes looks heavenly! Those dense chocolatey layers sandwiched between that creamy, luscious frosting. Screw the resolutions – give me more cake! Love the photos as always. Happy New Year!
