Ok, seriously I have no idea what to write about. I don’t really want to write about Christmas again even though it’s totally all I want to talk about. I mean the lights, the egg nog, the cookies. Ohhhh the cookies. But as I said I don’t want to write about Christmas.
I totally could go on and on about all the shows I’m totally into. I mean, I totally watched the entire first season of American Horror Story in a week. I am totally addicted. And I have been watching The X Factor for the first time ever and I could go on about how Simon totally picks on Demi and how Britney’s really a robot with no personality. But…. I don’t really want to blab on about tv.
I don’t want to go on about all the cool Christmas stuff I’ve seen. I saw a nail polish advent calendar that I am totally wishing someone would have bought me. Or how I am totally buying Ted my for Mr. but it’s really because I wanna see it from everyone on Twitter talking about it when it was in theatres.
But I will totally go on about this chocolate peppermint patty bark. It’s the filling of a peppermint patty smushed between layers of milk chocolate. The filling is silly easy and all you need to do is just melt chocolate for the outside. Super easy and really, really tasty. The milk chocolate does add a lot of sweetness so you could totally sub in dark chocolate.
Right now this is sitting in my freezer hiding from Mr. He said it was one of the best things I’ve made. It’s a pain to cut so make sure you use a hot dry knife. I decorated mine with Candy Cane Kisses, cause I needed a reason to buy an entire bag and only use a couple. It’s all about justifying.
Homemade Peppermint Patty Bark
First we need to melt 8 oz of chocolate and spread it out on some parchment on a baking sheet. Then put it in the freezer.
Then you are going to throw your icing sugar, corn syrup, peppermint, water and shortening in your mixer and well, mix.
About 3o minutes later when the chocolate is set, take it out of the freezer and scoop all of your peppermint filling on top. Smooth out with an offset spatula. Place in the freezer while melting your top layer of chocolate. Once your chocolate is melted and your filling is hard pour chocolate over filling and smooth out and decorate, quickly, with anything you want, chopped candy candy, marble in some white chocolate, add chopped Hersey’s Kisses. Whatever you like.
Put back in the freezer and let set. Once the top layer is hard cut into pieces with a hot, dry knife.
