Chocolate Malt Cookie Bars

Everyday I take the dog for a walk and I can’t get over how many houses already have their Christmas trees up. I have seen houses where the Christmas trees have been up and decorated for like 3 weeks already. I can’t even think about decorating until December 1st, and we don’t even get our tree until a week and a half before Christmas.

Are we abnormal? Is it because we spend so much fricken money on Christmas decor that people feel need to have it up for months? In Canada our Thanksgiving is WAY more low key than the US and Christmas shows up in the stores in October now. October used to be reserved for candy, and costumes and trick or treating.

I love Christmas, it is by far my favorite holiday, but it’s not happening in MY house until December. Well….. expect for Christmas eating. I mean, that doesn’t really count because the treats don’t hang around taking up space for weeks. Not in my house anyway. ­čśë

Here are some super easy cookie bars made with Chocolate Malt powder. I got some when I was a Target a couple months ago and hadn’t used it yet. That needed to change. These bars are super soft and really, really good warm with all the melty chocolate chunks inside. ┬áThey are totally fabulous in a lunch bag or eaten for breakfast. ┬áNot that I would ever eat a cookie for breakfast or anything.

Or you could totally take these up a notch and sandwich a big scoop of candy cane ice cream between 2 warm, gooey, ooey bars and dessert is served.  Really, really good dessert.

Chocolate Malt Cookie Bars


  • 1 c butter - room temp cut into pieces
  • 1/2 c granulated sugar
  • 1 c packed light brown sugar
  • 1 tsp vanilla
  • 1 c chocolate malt power
  • 2 eggs - room temp
  • 2 c all purpose flour
  • 1 1/4 tsp baking power
  • 1/2 tsp salt
  • 10 oz chopped milk chocolate


  1. Preheat oven to 325 F. Move oven rack to the middle position. Line a 9x13 baking sheet with parchment paper and set aside.
  2. In a medium bowl whisk together flour, baking powder and salt. Set aside.
  3. In the bowl of your standing mixer place butter, granulated sugar and brown sugar.
  4. On medium speed mix until uniform in color, scraping down the bowl once.
  5. Then add eggs, one at a time mixing for a few seconds in between, next add in the vanilla.
  6. Now add the chocolate malt powder and mix.
  7. Next, while the mixer is on low add in your flour mixture. Mix until no flour streaks remain.
  8. Fold in your milk chocolate chunks by hand.
  9. Scoop batter in your prepared pan and bake for 35-40 minutes. You want a toothpick inserted to come out with some crumbs but not with batter. You don't want to over bake or they won't be as soft.
  10. Once almost completely cooled remove gently from the pan and cut into squares.
  11. Enjoy!

    These look SO fudgy. I want one! We decorate usually Thanksgiving weekend (or, in this case, the weekend after). I figure, if I’m spending that much time… I want to enjoy it! :)
