Brownie Peanut Butter Cookie Dough Sandwich Cookies

I am sitting here writing this while avoiding housework like the plague.  Today I was suppose to clean the oven, the kitchen, vacuum and clean out the fridge.  Instead, I made homemade buns for dinner, talked on the phone, wrote a post, made french toast and went to the mall with the kids.  That totally makes it ok, right?

Sometimes, I just can not get motivated to do chores.  They aren’t fun.  And everything just gets dirty again.  It’s not like anything stays clean and sparkling, especially in my house.  There are always finger prints on the windows and crumbs on the floor.  It doesn’t matter how much or often I do clean.  Cleaning is way less fun that making yummy stuff and drinking coffee and painting outside with the kids.

Oh why can’t I afford a maid?  But you wanna know the truth, I would totally clean up before the maid got here.  Is that weird?  I’m sure it is.  But eating the filling with a spoon is NOT weird, not at all.  Eating like 5 of these cookie sandwiches is not weird either and don’t let anyone tell you it is.  They are lying.

These cookies are soft and are totally fabulous on their own.  They would be to die for with a sprinkle of sea salt on top.  Oh my goodness.  But I couldn’t just leave them alone so I decided to make peanut butter cookie dough frosting.  It tastes exactly like peanut butter cookie dough but just a touch thinner.  OMG I had to leave the kitchen so I wouldn’t eat the entire bowl.

So stop doing all that gross grown up stuff and go make cookies.

Peanut Butter Cookie Dough Brownie Sandwich Cookies

Peanut Butter Cookie Dough Brownie Sandwich Cookies

Ingredients

    Brownie Cookies
  • 1 c butter - room temp
  • 1 c granulated sugar
  • 3/4 c packed light brown sugar
  • 2 eggs - room temp
  • 1 tsp vanilla
  • 1 1/4 c cocoa powder
  • 1 3/4 c all purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • Peanut Butter Cookie Dough Filling
  • 1/4 c butter - room temp
  • 1/4 c all natural peanut butter
  • 1/2 c packed light brown sugar
  • 1/4 c granulated sugar
  • 3/4 c all purpose flour
  • 1/2 tsp salt

Instructions

    Brownie Cookies
  1. Preheat oven to 350 F. Move oven rack to the middle position. Line a baking sheet with parchment paper and set aside.
  2. With an electric mixer cream together butter, brown sugar and granulated sugar until light and fluffy, about 4-5 minutes on medium speed.
  3. In a medium bowl whisk together flour, cocoa, salt and baking powder. Set aside.
  4. Stop mixer and scrape down the bowl. Add in your eggs one at a time and beat on low until just incorporated. Add in your vanilla and scrape down the bowl again. Then while the mixer is running on low slowly add in your dry ingredients.
  5. Mix until the dough is uniform in color and no flour streaks remain.
  6. Take a rounded tablespoon of dough and roll into a ball. Place on the baking sheet and gently press down. You can always make a cross patten with a fork. Repeat until your baking sheet if full, placing each cookie about 1 1/2 inches apart.
  7. Bake for 8-10 minutes, just until the edges look done but the middle looks slightly underdone.
  8. Let cool on the baking sheet a couple minutes and then transfer to a wire rack to cool.
  9. Peanut Butter Cookie Dough Filling
  10. Cream together butter, peanut butter, brown sugar and granulated sugar until well mixed. Scrape down the bowl a couple times while mixing.
  11. Sprinkle in flour and mix until combined.
  12. Smother cookie dough on one half of a cookie and top with another cookie.
  13. Enjoy!

    Um, yes please. PB Cookie dough frosting? Amazeballs. And I agree. Housework is not worth it when it’s dirty again 3.2 seconds later. :) I’d rather bake. And eat.
