I made these for my best friend for the last 19 years. It’s so crazy when you say it like that. 19 YEARS! I met her in grade 8 our first year of high school. We didn’t like each other at first but it didn’t take long at all before we were literally inseparable. We only went to school together for 5 months. We spent a year and a half in completely different cities. None of that stopped our friendship. We wrote letters (by hand) talked and spent as much time together as possible when we could.
We had fights and chunks of time we didn’t speak. We always came back together. We always will. It’s one of those crazy life long friendships that doesn’t come around often.
During one crazy summer, I think we were 14 we pretty much lived off Skittles, Cool Whip, Clearly Canadian and McDonald’s. We would sometimes add in Kraft Mac and Cheese, tomato and rice soup, giant bowls of Special K (rice krispies dressed up) and the strongest biggest glasses of iced tea ever! Totally gross right??!!? Well, I wanted to mail her something for her birthday. Our schedules are crazy and we live about an hour away so I knew I wasn’t going to see her.
I thought about our ridiculous eating habits and something that would also be easy to mail. So Skittles in Rice Krispies it is. The Skittles make these a little sourer, sweet and chewier. These are easy, peasy and you can eat the rainbow.

Skittles Rice Krispie Squares
40 large marshmallows or 5 c mini
1/4 c butter
5 c Rice Krispies
1 heaping cup Skittles Candies – I used Original
Line a 9×13 pan with plastic wrap. Spray with non-stick cooking spray. Set aside.
In a large pot over medium heat melt butter and then add in marshmallows. Stir with a wooden spoon until marshmallows are melted. Once the marshmallows are melted remove from heat and add in your Rice Krispies. Stir, stir, stir until all the Rice Krispies are coated. Then add in your Skittles. Stir until they mixed in. They don’t need to be completely incorporated but not in once huge chunk.
Pour into your prepared pan and let sit until they set. Using the plastic wrap pull out the entire block of Rice Krispies and place on a cutting board. Cut into squares and share!
