I am totally obsessed with The Hunger Games The Hunger Games movie. I bought it the day it came out and I’ve watched it 4 times. I am actually watching it as I type this. I did read the books first. I love both equally. I am excited for the new one but it’s just so far away. I am impatient. I don’t wanna wait.
I tried Zumba for the first time. I pictured it being a huge room of 20 year old girls with sports bars, shorty shorts and six packs. That’s not me. I was pleasantly surprised that it totally wasn’t like that at all. There were some older ladies that sort of kicked my ass though. I don’t know which is worse for the ego. I will, say I loved it. I’m totally going back.
Have you heard of Dog Shaming? It is the most hilarious site I’ve seen in a long time. I was laughing so hard I was crying. It’s hard to pick just one for my Max. He is getting huge though. Six months and already 50 lbs. He’s not really a puppy anymore.
I went to Kamloops, BC for the long weekend. I love hanging out with my family. It’s not far from Vancouver but it seems a million miles away. It’s just way more chill. I am always sad when I leave.
I am obsessed with grilling pizza. It’s just so quick and easy. Tonight it’s chicken, bacon and roasted garlic. I can. not. wait. I need this bacon off my counter before I seriously eat it all. If you’re interest this is the recipe I use for my crust. The only thing I do differently is I add a bunch of dried spices.
Know what else I am loving right now. These frosting everything cookie cups. Little bit of chocolate, little bit of caramel, little bit of frosting, little bit salty and a little bit crunchy. By themselves the cookie cups are good. I think they would be better just as cookie but once the frosting is added these become irresistible. I kid you not. I couldn’t keep my hands off them. Riduculousness.
Chocolate Frosted Everything Cookie Cups
– makes approx. 18
Everything Cookie Cups
1 c butter – cut into pieces
2 1/4 c all purpose flour
1 tsp baking soda
1 tsp salt
1/4 c granulated sugar
1 1/4 c packed light brown sugar
1 egg + 1 egg yolk – room temp
2 tbs milk – room temp
1 1/2 tsp vanilla
1/2 c broken up pretzel sticks
1 c chopped Mars Bar
1 c rainbow chocolate chips – I get mine in the bulk section at Superstore.
Caramel sauce for drizzling
Rainbow chips for sprinkling
Place chopped Mars bars in the freezer.
Everything Cookie Cups
Preheat oven to 350 F. Spray regular size muffin tin down with non-stick spray. Set aside.
In a large bowl melt your butter in the microwave. Stir in brown sugar and granulated sugar. Add in eggs, vanilla and milk, stir until combined.
Add in your flour, salt, and baking powder. Stir until completely combined and no chunks of flour remain. Fold in your Mars bars, rainbow chips and pretzels.
Fill each muffin tin 1/2 way up with cookie dough. Bake for 10-12 minutes until the centre looks done and the edges are lightly browned. (Your will be a bit lighter than mine because you won’t be searching for your oven mitt for 3 minutes like an idiot)
Let cool 10 minutes and remove from muffin tin. Let cool completely before frosting.
In the bowl of your electric mixer beat butter on medium speed until light and fluffy. About 3 minutes. Scrape down the bowl and then sift in confectioner sugar, chocolate malt powder and cocoa. Beat until uniform in color scraping down the bowl at least once. Add milk to thin.
Spread on cookie cups. Drizzle with caramel and sprinkle with rainbow chips.
