3 Way to Dress Up Vanilla Ice Cream

It has been crazy hot and humid here in Vancouver lately.  I love it if I can stay home and not turn on the oven.  If I had my choice I wish I could spend everyday at the lake or pool.  I would play with the kids and dog and everyone would listen and it would be just like tv.  I mean might as well go all the way with the wishing while I’m at it right?)  But since that is not what actually happens I’ve decided this week to do a series of no bake treats.

I love vanilla ice cream.  I like the other flavors too but there is just so much you can do with vanilla.  Anything goes.  Chocolate, caramel, oreos, peanut butter, fudge, coffee, Nutella, fruit.  It is the blank slate of ice creams.  Or you could totally just eat it plain.   One day I swear I’m going to get an ice cream maker and make ice cream myself.  Then gain oh I’d say 30 pounds. lol.

I wanted to do 3 simple way to dress up your vanilla ice cream.  Only one requires turning on your stove and it’s only for a couple of minutes.  Nothing complicated, nothing confusing and all delicious.

First up is Caramel Brown Butter.  Don’t worry we are going to use store bought caramel.  Simple seriously delicious.   Secondly, white chocolate sprinkle magic shell.  If you haven’t had magic shell before it creates a hard shell around your ice cream, kinda like a chocolate dipped cone.  I made it with coconut oil so it has a slightly coconutty flavor and lots and lot of sprinkles.  Last but not at all least I made mocha magic shell.  Milk chocolate and instant espresso with vegetable oil.

All are fabulous and flavorful ways to dress up vanilla ice cream.  You could make one or all three ;)

Caramel Brown Butter Sauce

makes 1/2 cup

2 tbs butter
1/2 c premade caramel sauce – I used Starbucks brand

In a small sauce pan over medium heat melt butter until foamy.  Keep heating and stirring until the foam subsides and the butter smells slightly nutty and is brown.  Let sit a few minutes and slowly add in your caramel sauce while stirring constantly.  It will bubble a bit so make sure you add it slowly. Keep stirring until well combine.  Serve slightly warmed over vanilla ice cream.

Store in the fridge and reheat before serving.

White Chocolate Sprinkles Magic Shell

1/2 c white chocolate chips
1 tbs coconut oil
1/4 c rainbow paralis

In a microwavable safe dish melt chocolate chips on 50% power stirring every 30 seconds until smooth.  Add in oil and stir until smooth and combined.  Let sit a minute before you add in your sprinkles.  Pour over ice cream and let sit about 30 seconds until it gets hard and crunchy.

Store at room temperature and reheat until pourable before serving.

Milk Chocolate Mocha Magic Shell

1/2 c milk chocolate chips
1 tsp instant espresso powder
1 tbs vegetable oil

In a microwavable safe dish melt chocolate chips on 50% power stirring every 30 seconds until smooth.  Add in oil and espresso powder and stir until combined and smooth.   Pour over ice cream and let sit about 30 seconds until it gets hard and crunchy.

Store at room temperature and reheat until pourable before serving.

    I need this in my life! I need all three! Pinned, because I will be making them, especially that browned butter one. Is it bad if I skip the ice cream and eat the sauces with a spoon?
