Banana Cinnamon Chip Muffins

Max is almost 6 months old now.  It’s crazy how big our little yellow lab puppy has gotten.  He’s about 45 pounds.  He already out weighs both the kids.  I take him out every day and we usually go by our local dog park.  He has a best friend.  I didn’t know dogs could have best friends but Max totally does.  Her name is Maddie and she is a 9 month old husky X.  They are crazy when they get together.  They wrestle and chase.  It’s hilarious to watch.

I’ve also started taking him to puppy class at Good Dog.  It’s… well…. interesting.  He isn’t the biggest dog but I think he out weighs all the other dogs.  There are some of the cutest dogs I’ve ever seen and sweetest dogs I’ve ever seen.  The one awesome thing about puppy class is we get to pass around the puppies so everyone gets to experience Max and I get to experience calm puppies. lol

The problem is Max just wants to play.  He wants to hang out with the other dogs, socialize, wrestle, run around.  He does not want to sit pretty and lie down calmly.  Every other puppy is totally cool doing that, for the most part.  Max will only do something as long as he has to, to get a treat or get to play.

What does this have to do with muffins you may ask… Well, I made these muffins while the kids were napping.  I pulled them out and sat them on the cooling racks while I sat down and enjoy a fabulously, warm muffin and a coffee.  Max was sleeping, or so I thought.

All of a sudden I see him out of the corner of my eye with a muffin.  I ran to go and take it away and noticed that 5 muffins were missing.  Not just the muffins but the wrappers as well.  The little bugger and eaten almost 1/2 a batch of fresh, warm, perfect muffins all to himself in a matter of maybe 5 minutes.  Ya I was not impressed, but there isn’t much you can do but laugh.

These are the perfect banana muffins.  We don’t have cinnamon chips in Canada.  This really needs to change.  I didn’t have super high hopes for them but I was pleasantly surprised.  The cinnamon chips paired perfectly with the sweet banana muffin.  Mr., who isn’t a big fan of banana things loved these.  Said they were amazing.  That is amazing.  lol

Banana Cinnamon Chip Muffins – 12 muffins

2 brown ugly bananas
2 c all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp nutmeg
1/2 c butter – room temp
1 c granulated sugar
1 egg – room temp
1/3 c milk – room temp
1 c cinnamon chips

Preheat oven to 350 F.  Move oven rack to the middle position.  Line muffin tin with cupcake liners. Spray with non stick spray and set aside.

In a medium bowl whisk together flour, baking powder, baking soda, salt and nutmeg.  Set aside.

With an electric mixer cream together butter and sugar.  Once combined, (about 3 minutes) turn mixer to low and add egg, banana and milk.  Mix until just combined.

Gently stir in your dry ingredients.  Once no flour streaks remain fold in your cinnamon chips.  Divide your batter evenly between your lined muffin tins.  Bake for 17-20 minutes until a toothpick inserted comes out clean.

Serve warm or room temp.
