Chocolate Cherry Hand Pies

So here’s a little tidbit about me, I don’t have my licence.  I can’t drive.  Never learned.  As a teenager my mom didn’t teach me how to drive.  As I moved out and got older it was just never a priority.  Well, I am in the process of changing that.  I am learning to drive.  I have been learning for a the past couple months.  Mr has been taking me.  It creates some interesting challenges.

I am not the best student.  I am too independent.  I am not very good at taking critisim from Mr.  It’s just hard to be incorrect, I guess.

Last night I was out practicing how to back into a parking stall in an empty high school parking lot.  Then I noticed another car driving slowly around the parking lot with an L sign on the back.  They drove past us as the young girl driving smiled and her mom gave us the thumbs up.  It was pretty funny.  I’m driving around the the dog in the back seat, between 2 car seats getting encourgement from a 16 year old and her mom.

I used my fav pie crust recipe and wrapped it around some fresh cherries and a sprinkling of dark chocolate to create these Chocolate Cherry Hand Pies.  I loved the tart combination of the cherries and the chocolate.  These are not very sweet and best served warm.  When it comes to the chocolate a little goes a long way.  These are best served warm so the chocolate is just a little melty and cherries are a little more juicy.

Chocolate Cherry Hand Pies – makes 8

Pie Crust – one double crust recipe

3 c all purpose flour
1 tbs sugar
1 c cold salted butter
3/4 c ice cold water – I let my water sit in the freezer for a couple minutes.

Filling

2 cups chopped fresh cherries
1 tbs sugar * or more if you want a sweeter hand pie
1 tbs flour
2 oz chopped dark chocolate *I used a 72%
1 egg – for egg wash

In a medium bowl add flour and sugar. Mix together. Cut your butter into small chunks and toss in the flour mixture. Pour into a food processor and pulse until butter is size of hazelnuts.

Now you need to add your ice cold water. While pulsing in short 4 second bursts stream in your water through the feed tube. Pulse until your dough just, just starts to come together and stick to the blade.

Then dump it out on a floured surface and grab all the little pieces and knead everything together just until it holds. Maybe 4-6 times.

Split in half and form each piece into a disc. Wrap in parchment then plastic wrap and refrigerate until firm (about an hour).

Take your cherries and stir in sugar.  Add more to taste.  Add in flour and stir until all your cherries are coated.  Let sit for about an hour, while your crust is in the fridge.

Once your crust is firm preheat oven to 400 F.  Line two baking sheets with parchment paper.  Set aside.

Working with one disc at a time roll out crust to 1/4 inch thick.  Cut three six inch circles.  Take the extra pie dough and put back in the fridge.  You will have enough extra dough between the 2 discs to create 2 more 6 inch circles for a total of 8 pies.  Spoon cherries on half the circle leaving a 1/2 inch boarder.  Top with some sprinkled chocolate.  Fold over the crust to make a 1/2 circle.  Pinch edges together.

Place on baking sheet.  Cut 2-3 small x’s in the top.  Beat your egg in a small bowl and brush the top with some egg wash.  Repeat until all the pies are ready to go.  Put back in the fridge for 10 minutes.

Bake for 25-30 minutes until the tops are lightly browned.  Let cool a couple minutes before eating to avoid burning your mouth. ;)

Store in airtight container for up to 3 days.

    Yum, cherries and chocolate is a perfect combination! Your pie crusts look perfect – beautifully shaped, crimped, and golden. And congratulations on finally learning how to drive – it’s never too late! You’ll love the freedom that comes with being able to drive yourself and the kids wherever and whenever you need to go.

    I didn’t learn to drive until later, and my boyfriend was the one who ended up teaching me, so I understand the “challenges” it can be. Your pies look delicious and good luck with the driving!

    Ok we have very similar tastes in desserts!! You make gorgeous cherry hand pies, I do cherry pie, you do lovely strawberry swirled cupcakes I do strawberry topped brownies, you do donut shortcake, I do donut s’mores!!! I have to subscribe to see if the ideas continue! I love a blogging twin!
