Somedays I am totally up for spending hours in the kitchen. I could stand and measure, sift and stir forever. Other days, I want the finished products, like now. I don’t want to wait for room temp anything or turning on the mixer. I want yummy in my belly as instantly as possible.
This is one of those easy, simple, one bowl treats. Plus there’s very little waiting, no mixer and did I mention SPRINKLES?!?!?!?
What is even better about these is that they don’t taste or look like they only took you 5 minutes to whip up. They look fancy. I mean pretty, colorful, cookie sticks. That’s pretty awesome in my book. How great if you are a cookie dunker. They are crunchy on the edges but still slightly soft in the middle.
The possibilities are endless, you can use any chocolate, candy, sprinkles combo. Next time, I would probably try and put sprinkles in the cookie, as well as on top.
Sprinkle Cookie Sticks Recipe – makes approx 30 cookie sticks
1/2 c vegetable oil
1/2 c light brown sugar – packed
1/2 c granulated sugar
2 tbs vanilla
1 1/2 c all purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/2 c sprinkles – I used rainbow jimmies
Preheat oven to 350 F. Line a baking sheet with parchment paper.
In a large bowl mix oil, granulated sugar, brown sugar, egg and vanilla until combined. The add in your flour, baking soda, and salt. Once it’s all combined divide the dough in half. Place the dough on the baking sheet. Roll dough in to a 15 inch long log. Pat down the log until it’s about 3 inches thick.
Repeat with the rest of your dough until you have 2 logs on your cookie sheet about 3 inches apart.
Pour sprinkles all over your dough. Gently pat down the sprinkles so they stick to the dough.
Bake 7-8 minutes.
Cut with a pizza cutter while warm into inch thick pieces. Once cooled store in an airtight container for 3-4 days.
