I had a crazy busy weekend. It seems that weekends are busier than weekdays lately. On Saturday I went to watch The Hunger Games in theatres. I was pretty impressed. It held pretty close to the book. Most of what they changed or left out you could understand why. There were a couple things I missed in the movie that were in the book but overall it was pretty good. I am now rereading it.
After the movie a couple girlfriends and I went out for dinner and laughed and chatted way longer than I expected. Not that there is anything wrong with that.
On Sunday my mom and I decided to go down to South Granville and hit up Williams-Sonoma and Anthopologie. It was bad in a good way. So, so many pretty things. I could have spent hours in those stores. I was shopping for my cousins wedding gift. I’m putting together a basket of goodies. I will show you after I give it to her.
For lunch we went to Meinhardt’s fine foods, which I used to work at like 10 years ago. Their pesto chicken sandwich is still great. Oh and I had this sandwich cookie made from soft ginger cookie and frosting in the middle. It was delicious.
Overall my weekend was fantastic. Friends, family, sun, shopping, I mean it was almost perfect. The one down side was Little Mister has the measles. I read you have a 5% chance of getting them if you are vaccinated. A 5% chance and he gets them. So it’s going to be at home week.
Ooo and I made these cookies. Cranberry White Chocolate Cardamom Cookies.
Crispy on the outside, chewy on inside, just the way an oatmeal cookie should be. The Mr. thought they were health food. They are not. The white chocolate and cranberry go together so well and neither is the star. The cardamom is subtle and interesting. I am craving these as I’m writing this, but as usual they didn’t last long.
*I went to buy cardamom and it was like $8 so I went into the international aisle in the grocery store and it was almost 1/2 the price and you got more. So if you are looking for it check out the international aisle.
Cranberry White Chocolate Cardamom Cookies – makes 2 dozen
1 c all purpose flour
1 c quick cooking oats
1/4 tsp cardamom
1 tsp baking soda
1/4 tsp salt
1/2 c butter – room temp
1/2 granulated sugar
1/2 brown sugar
1 egg – room temp
1 tsp vanilla
1 c dried cranberries
1/2 c white chocolate chips
Preheat oven to 375 F. Move your oven rack to the middle position. Line a baking sheet with parchment paper. Set aside.
In a large bowl whisk together flour, oats, baking soda, cardamom and salt together. Set aside.
In another large bowl or using a standing mixer cream together butter, granulated sugar, brown sugar and vanilla until uniform in color, scraping down the bowl once. Add in your egg, scrape down the bowl and mix until combined.
While the mixer is on low add in your dry ingredients. Mix until combined, dough will be thick. Once combined, add in your cranberries and white chocolate chips. Fold them in with a spatula or wooden spoon.
Scoop a round tablespoon of dough, roll into a ball and place on cookie sheet about 2 inches apart. Slightly flatten cookie and bake 10-12 minutes.
Store in an airtight container for up to 3 days.
