Chocolate Chip Cookie Peanut Butter Cup Brownies

My girlfriend brought her big yellow lab, Buddy, over to our house for the day on Saturday.  Little Miss loves dogs!  Her first words were pretty much dog home.  All she talked about last week was Buddy was coming over.  It was the first thing she talked about when she woke up in the morning and the last thing she asked about before bed.

Buddy got here and his mom was worried about how crazy he is.  Hahahaha little did she know my kids are way crazier.  Buddy entered the house and off they went.  Little Miss, Little Mister and Buddy running through the house.  Little Mister just ran and screamed this crazy i’veneverbeenthisexcitedever high pitched scream.  It was one of the funniest things I have ever been witness too.  After about 20 minutes everyone finally calmed down.  We played went for a walk and had a nap.  He chewed the legs off his brand new toy.  It was a great day.

Needless to say Little Miss and I always wanted a dog and now we really just NEED a dog.

I actually made these for Buddy’s mom’s birthday party.  They are inspired by the slutty brownies that have been floating around the internet.  I didn’t want to stuff cookies in brownies so I used peanut butter cups instead.  Let’s just say it was a good choice.


The peanut butter cups between the soft cookie and the brownie…. amazing. It’s pretty hard to go wrong with that combo.  Only suggestion is add more peanut butter cups.  You could always just sub in your fav brownie and cookie recipe.

These are thick brownies.  I would almost think about cutting the brownie and cookie amounts in half.  I made these for a party so it was ok.  It was a lot. Yes, these were as good and they sound.

Chocolate Chip Cookie Peanut Butter Cup Brownies – one 9×13 pan

Brownie Layer

1 c butter – cut into pieces
1 c all purpose flour
1 c cocoa – I used dutch processed
1 1/2 c packed brown sugar
1 tsp salt
4 eggs – room temp
1 tsp vanilla


Cookie Layer

1 c butter – cut into pieces
2 1/4 c all purpose flour
1 tsp baking soda
1 tsp salt
1/4 c granulated sugar
1 1/4 c packed light brown sugar
1 egg + 1 egg yolk – room temp
2 tbs milk – room temp
1 1/2 tsp vanilla
2 c milk chocolate chips

12 reece peanut butter cups (I would probably up this to 15) cut in 1/2

Here is how I made these.  I always try and minimize dishes and steps.  You could always just make the brownies and cookie batter completely separately.

Preheat oven to 350 F.  Place oven rack in the middle position.  Line 9×13 pan with parchment paper.  Set aside.

Get 2 large bowls out.  One will be for your brownies and one for your cookies.  Mark the bowls.  I put a paper towel under each with a C and a B on them.

In a medium sauce pan over medium melt all your butter (2 c), stirring often.  Once melted pour 1/2 the butter into each bowl.  (1 c each)

In your cookie bowl add the 1/4 c granulated sugar, 1 1/4 c packed brown sugar and the 1 1/2 tsp vanilla.  Stir until well mixed.  Set aside and out of the way.

In your brownie bowl add your 1 1/2 c packed brown sugar and your 1 tsp vanilla.  Stir until well mixed.  Let your bowl sit until they cool down and are room temperature or very close.

In a third bowl we are going to add mix our dry ingredients.  Brownie first – add your cocoa powder, flour and salt.  Mix until completely combined.  Grab your brownie batter and add your 4 eggs one and a time and mixing gently in between each.  Then dump in your dry mixture and stir with a spatula until no streaks of flour remain.  Pour brownie mixture into your prepared pan.  Top with peanut butter cups, pressing down slightly.

Wipe out your dry ingredient bowl and add your flour, baking soda and salt for the cookie layer.  Whisk together.

Grab your cookie batter bowl and add your egg and egg yolk and milk.  Mix until combined.  Then you are going to add in your dry and mix.  Fold in your chocolate chips.

Now your are gonna get a little dirty.  Grab a handful of cookie batter and flatten place on top of your brownie/peanut butter cups.  Repeat until the cookie batter has completely covered your brownies and peanut butter cups.

Bake for 45-50 minutes.  The top of the cookie layer will be slightly crunchy and light brown and a toothpick will come out slightly crummy.

    Totally a good choice. I have made the brownies with the Oreos in them as well (I used the peanut butter filled ones), but I think I would love the peanut butter cup stuffed version more!

    I’m making these now, with a slight change: I’m using TJ’s mini pb cups. I slathered the brownie layer with them — yum! Unfortunately mine are also for a party. Boo!

    As soon as i saw this recipe I wanted to try them (but couldn’t get a hold of peanut butter cups I live in Dominican Republic and you don’t always get them), and when I did……OMG!! wonderful!!! Only i didn’t have my baking pan so i did it in cup cake pans and used a whole peanut butter cup in each cupcake. They were wonderful!! Thank you so much!!! I love your blog and will continue trying the wonderful recipes!!
