In Vancouver every year for the last 101 years they have the Pacific National Exibition (PNE). It’s a giant fair in the city. We went this year and it was super fun. We skipped the rides but totally hit the food, of course. I got a Poutine Dog. It was a hot dog covered in fries, gravy and cheese on a pretzel bun. Annddd bacon. Oh my it was good.
We got a snow cone and cotton candy but I missed out on the mini donuts again this year. We played games. It was just an all around good time. I wanted a stuffed unicorn but it just didn’t happen for me. Boo!!
The best thing was watching the Super Dogs though. We don’t have a dog but I really want one and therefore have trained the kids to want one ;). Soon-to-be keeps saying that he will have to move out if we get a dog but I think he is bluffing. Well I hope he is. I guess we could always put a bed in the garage. I don’t know how Soon-to-be would feel about sleeping in the garage but I’m sure he would get used to it.
These treats are crunchy, chewy and yummy. Soon-to-be calls them Bird Turd Brownies *sigh*. They are Cocoa Brownies covered in a layer of Marshmallows and Oreos. Let’s call them Oreo Crunch Brownies.
Yum. Crunchy, chewy, sticky what more can you ask for from a brownie. The brownie moist and it’s nice because it is one of those recipes you can totally just throw together. They don’t have any bar chocolate in them, just cocoa which I always have in the house. The marshmallow and oreo was sooo good on top. Everyone loved these brownies. They are great for lunches or toolboxes as is the case in my house.
Brownies Recipe – 8×8 pan -adapted from Smitten Kitchen
3/4 c butter – your gonna melt it
1 1/4 c granulated sugar
3/4 c + 2 tbs cocoa powder – I used dutch processed
1/2 tsp espresso powder
1/4 tsp salt
1/2 tsp vanilla
2 egg, cold
1/2 c all purpose flour
Move rack to bottom third of oven and preheat to 325 F. Line an 8×8 pan with parchment, leaving some hanging over the sides. (makes it easier to get out and cut)
In a medium heat proof bowl over simmering water combine butter, cocoa, sugar and salt. Stir occasionally until butter is melted. Take off the water and let sit until it cools just a bit. Stir in vanilla then add one egg at a time stirring well after each is added. When the batter is shiny and well blended add the flour. Stir until just combined then beat like a crazy person for 40 strokes with a wooden spoon. If you don’t have a wooden spoon you can use another spoon but your brownies will suck. (no they won’t really, just use another spoon)
Bake for 20-25 minutes until a tooth pick inserted in the middle comes out with a few crumbs.
3 tbs butter
26 marshmallows (little more than 1/2 a bag)
16 oreos (you could use a couple more if you wanted) – crushed
In a large pot add 3 tbs of butter and 26 large marshmallows and stir until melted. Add oreos and stir, stir, stir. Place on top of brownies in large spoonfuls around the surface of the brownies. Don’t just dump it in the middle because once the marshmallow touches the brownie it isn’t going anywhere without taking brownie with it. Spread out with a damp spoon if you wanna be neat but damp fingers works best.
